Now that we made the chorizo we had to something with it, right? Actually, the reason I made the chorizo was two-fold. First, I had made it previously and my sister-in-law Eva asked me for the recipe. Second, I wanted to make this dish and I sure am glad I did.
Getting back to what we do most here is another wonderfully spicy Mexican/New Mexican/Tex-Mexican/Southwestern style, spicy chicken casserole. There’s a whole lot of flavor packed into this meal and it’s easy to do. Interested???

This is an amazingly tasty dish. Baby Lady hardly ever eats a whole chicken quarter but she did this one.
