Dinner last night at the McGary Diner was this light, salty, lemony Chicken Piccata. What you don’t see is the bed of zucchini noodles underneath the chicken that we made with the newest addition to the kitchen toys. 🙂 Incredibly delicious, simple and prepared in under 30 minutes. Another ideal weeknight meal. Continue reading Chicken Piccata with Zucchini Noodles and a New Kitchen Toy→
It’s been a while since we had octopus. In fact, we haven’t had octopus since my sous vide disaster with it last June. I still haven’t figured out that disaster to attempt it again. Instead, I have been having way too much fun making homemade pasta. Thanks, John & Stefan. I had forgotten how good fresh made pasta is. This is the third batch of pasta in the 3 weeks. The star of this story, however, is the octopus. Continue reading Tomato & Red Wine Braised Octopus over Linguini→

Pears, anyone? Isn’t this a lovely dessert? No, we didn’t “poach” it as in take it illegally. We gently cooked the pears in red wine with sugar. It’s a very simple process yielding a dessert full of flavor although it does take a little time (about 30 – 40 minutes). Regardless, it is well worth it. Your family will thank you and ask why you never made (stole) this before. 🙂 Continue reading Red Wine Poached Pear→

Tasty, too. Continue reading Chile Relleno en Nogada (Stuffed Chile in Walnut Sauce)→
I realize some of you, upon seeing the title, are saying “Cream of what? Richard what are you trying to do to me?” Calm down… Yes, this is a red chile soup. Yes, it has a little heat. No, I haven’t lost my mind. This is simply an unbelievably flavorful soup and your choice of red chiles helps you control the amount of heat to fit your own taste, as well as the flavor profile of the soup. It is a wonderfully warming soup on a cold and blustery day. You really need to give this a try. Yes, you will like it. 🙂 Continue reading Cream of Red Chile Soup→
Having cooked in various capacities and for over 40 years I tend to take certain things for granted. I think we all do. We don’t mean to do so but we all get so accustomed to doing what we do that we forget someone may not know how to do that which we think is simple. We forget that someone had to teach us the most basic of things. Hence, the reason for this post. Continue reading How to Peel Tomatoes→
