Dinner last night at the McGary Diner was this light, salty, lemony Chicken Piccata. What you don’t see is the bed of zucchini noodles underneath the chicken that we made with the newest addition to the kitchen toys. 🙂 Incredibly delicious, simple and prepared in under 30 minutes. Another ideal weeknight meal. Continue reading Chicken Piccata with Zucchini Noodles and a New Kitchen Toy→
Chile Relleno en Nogada is a classic, traditional Mexican dish. Not that I got kissed by the Baby Lady for fixing it, although, lucky me, I did get a kiss from the Baby Lady. 🙂 It’s just a simple and fabulous dish that uses quality ingredients and I get out of the way to let the ingredients shine. It’s also quick and exceptionally easy, perfect for a weeknight meal, not to mention low-cal and low-carb while I’m working on my Holiday weight loss program. How can you go wrong with something that’s easy, tasty, good for you and helps you get that “girlish figure” back? Baby Lady has been inquiring, repeatedly, when I was going to post this meal. You see, these are Baby Lady’s Crispy Green Enchiladas.
