What a lovely meal!! I got the inspiration for this dish from Vicki Bensinger at In-Home Culinary Classes, although we have modified it considerably. The dish just looked sooo good I couldn’t resist giving it a try. This is a real show stopper that will impress any dinner guest, not to mention your family.

If you haven’t noticed, we like Mexican food and chiles. Baby Lady is from El Paso, so she grew up with it. I spent time in Mexico as a young boy and loved the food. Also, Mexican food was always available in Texas. Much of it, however, was Tex-Mex. This relleno is more of a traditional Mexican dish and it is delicious. This is one of those KISS meals. Not that I got kissed by the Baby Lady for fixing it, although, lucky me, I did get a kiss from the Baby Lady. 🙂 It’s just a simple and fabulous dish that uses quality ingredients and I get out of the way to let the ingredients shine.
