Salsa Verde

Have you ever noticed each region has its own style of cooking and some dishes immediately come to mind when you think of various places? For instance, Maine has its lobster roll. Chitown has its deep dish pizza. The South has its fried food. Louisiana has its gumbo. Well, Texas has its Tex-Mex and it sure is good. This recipe is for a Mexican style salsa verde (green sauce). Baby Lady’s Chicken Mole Huasteco Crepes

After I made the Crabmeat Purse with White Wine Lemon Butter Sauce, Baby Lady got to thinking. She liked the crepes, especially the purse, but felt it needed a sauce on the bottom so when you cut into the purse you would pull the bite through a nice sauce. I felt the purses were fine the way they were served but… Anyway, after giving it careful consideration she decided she wanted to fuse a little Mexican and French cuisines to come up with this dish. Cinco de Mayo Rellenos de Camarones

Today was Cinco de Mayo (El Día de la Batalla de Puebla). For those unfamiliar with Cinco de Mayo, it’s not Mexican Independence Day. It commemorates the Battle of Puebla where the much more poorly equipped Mexican army of 4,000 crushed the 8,000 strong French army as France was trying to expand the French Empire into Latin America. Despite Mexico being finally conquered by France, Cinco de Mayo is still celebrated today. It is observed in the United States as a celebration of Mexican heritage and pride and to commemorate the cause of freedom and democracy during the first years of the American Civil War. Baby’s Grouper Ceviche

Given the temperate climate we have been having in Texas throughout the winter, we haven’t made a lot of soups, stews or hardy meals. Although the months have flown by, the seasons have more or less remained the same, except we are not being brutalized by searing heat.
