Quickstep’s Panini – Rosemary, Thyme Sous Vide Chicken on Rye Bread with Cream Cheese, Garden Fresh Arugula and Peach Chutney

When we made the sous vide chicken last week there was one boneless chicken breast remaining. They were huge, weighing 14 oz each! Quickstep, being a young man, has never missed a meal nor has he met a meal he didn’t like so he had no problem with a 14 oz. chicken breast and all the trappings. Here is Quickstep engaged in his favorite activity.

He hates it when I do this to him but I just can’t help myself. 🙂 He has his hands full so he can’t grab the camera. 😮 But I digress.

Baby Lady and I split one of the chicken breasts and it was still a lot of food for us lesser mortals. This left one beautifully cooked, moist breast in the refrigerator for another day. Today was that “another day” and was Quickstep’s leftover day. It’s also summertime so the meal had to fit the season and boy was it good. What a beautiful weekend it was. Sunny skies, still not over 100 F (yet, but it’s coming). We’re out of the drought (at least for now). The lawn is green. Summertime is pickling time. Right now the local farmers markets are full of melons, cucumbers, lettuce and greens, tomatoes, beans, squashes. The list goes on and on. Because summertime brings us an abundance of the freshest produce of the year, this is the time to put up some of the beautiful bounty for later in the year. Also, I simply like pickles. I like all kinds of pickles and I’m not alone. Did you know that In the United States alone, over 5,000,0000 pounds of pickles are devoured annually? Success! I hate failure, especially in the kitchen. It’s even worse when you see all these reviews telling you a child could do what you failed at. If you can’t tell, the octopus eraser has bothered me ever since I fixed that dreadful meal and I refuse to be beaten by some technical process or a machine. So, determined to learn the process of sous vide with protein, back to the drawing board I went but this time with a little more manageable meat, chicken. As you will see, the result was outstanding.
