I’ve been dying to make this dish. It’s such a great dish, perfect for those of you having cold weather and needing something that will warm you all the way through. So, I got tired of waiting for colder climate and made it anyway. We had a 13 F drop in temperature all the way from 88 F down to 75 F so we pretended we had a cold snap. I know it’s got chiles in it but these are poblano chiles and you will like it. I promise. Continue reading Chicken Poblano Chowder with Fried Tortilla Sticks and Goat Cheese Crumbles

Cedar Plank Salmon with Orange & Pomegranate Salsa Accompanied with Grilled Asparagus and Balsamic Vinaigrette

Well, temps in DFW are back in the 80s again. It’s so hard to get in a Fall mood when it’s 88 F outside. Now, granted it’s better than 100 F but let’s be realistic. It is November after all. I have all these soups, stews and braises I want to cook but the weather just isn’t cooperating. So, it’s grilling time. We broke out the cedar planks and did some salmon with a wonderful light salsa and those gorgeous homegrown pomegranates. To accompany the meal we grilled some gorgeous asparagus I found at the market. Pretty good dinner even if I say so myself. 😉 Continue reading Cedar Plank Salmon with Orange & Pomegranate Salsa Accompanied with Grilled Asparagus and Balsamic Vinaigrette
Red Chile, Cheese and Onion Enchiladas

OK, this is a multi-post Monday. Although this post has chiles, it’s kinda in line with Saturday Breakfast: Fried Eggs atop Sautéed Mushrooms and Onions on Sourdough Toast Finished with Bourbon Sauce because it concerns itself with leftovers. This recipe is for those of you who try the Red Chile Braised Pork Tacos. It’s a killer recipe that everyone will like but the amount of chile paste remaining is roughly 1 to 1-1/2 cups. That is a lot of leftover chile paste. It took some work to make and it’s simply too good to throw away. So, what do you do with this wonderful chile paste? You make enchiladas, that’s what. Red Chile Braised Pork Tacos

This dish is the net out of a beautifully chile braised pork shoulder and poor memory. The flavors are big and bold, just like you would expect and the aromatics while it was braising wafted throughout the house. It’s a wonderful fall meal. Continue reading Red Chile Braised Pork Tacos
Almejas al Mojo de Ajo (Clams with Garlic Salsa)
Another wonderful meal at the McGary cafe! Do you like clams? I do. While Baby Lady loves her mussels, I absolutely adore clams. This is a wonderful way to cook clams and is guaranteed not to disappoint. Give it a try sometime. Continue reading Almejas al Mojo de Ajo (Clams with Garlic Salsa)
Mediterranean Chicken with Pomegranates and Root Vegetables

This is a wonderful Fall meal with our fresh little pomegranate jewels. Doesn’t this look delicious? Baby Lady wanted her portion of the meal shown in the header so you can see she picked out the carrots. They’re the little blurry orange things tucked behind the good looking drumstick. She absolutely hates cooked carrots and picks them out of any meal in which they are served. I, on the other hand, thought they went beautifully with the meal but I digress. Thomas Keller’s Insanely Delicious Quiche Lorraine
Are you hungry now? Baby Lady calls this dish “decadent” but she’s a woman. We all realize, “real men don’t eat quiche,” right? That’s because those “real men” have never eaten Thomas Keller’s Insanely Delicious Quiche Lorraine. If they had, they would have gone back for seconds! It’s so rich that thirds are completely out of the question. I could only eat the meal. Continue reading Thomas Keller’s Insanely Delicious Quiche Lorraine
