Baby Lady and I have been traveling and working a lot. While it kept me from posting, it did not keep me from eating good food like this beautiful Pork Chop Scarpariello. Continue reading Pork Chops Scarpariello (Shoemaker-Style)
Moroccan Spinach with Preserved Lemons, Garlic and Paprika Topped with Goat Cheese

This is a fabulous side dish and went very well with the Steak Richard if I do say so myself. It is a wonderful way to fix spinach, is unique and packs a lot of flavor into a side dish. If you don’t try this dish then shame on you. Continue reading Moroccan Spinach with Preserved Lemons, Garlic and Paprika Topped with Goat Cheese

This recipe is for all my carnivore friends who get tired of all the seafood recipes. Continue reading Steak Richard
Mushroom Burger with Italian Red Sauce, Pesto, Carmelized Onions, Provolone and Parmesan Cheeses on a Kaiser Roll

8 or 9 years ago on business I was traveling in St. Louis. It was late. The restaurant I wanted to go for dinner was closed that evening and I had an early day the next morning. So, I went to a local grill on a flyer. I don’t even remember the name and never went back. Nothing on the menu appeared appetizing so I settled on the portobello burger. It was the best part of the trip! Continue reading Mushroom Burger with Italian Red Sauce, Pesto, Carmelized Onions, Provolone and Parmesan Cheeses on a Kaiser Roll
Garlicky Roasted Baby Red Potatoes

I was talking to Dena (one of our legal assistants) yesterday about REMCooks.com and going through some of the photos and recipes (she didn’t know I cooked, much less had a food blog :o). I have found over the course of years that many people feel the same way. People always have a favorite main course or dessert but they are stymied when it comes to veggies. So I posted this veggie side dish. This vegetable side dish is is one of our favorites. We hope you give it a try. Continue reading Garlicky Roasted Baby Red Potatoes
Seared Tuna with Clementine Orange and Chipotle Miso Sauce

OK, I’m stuck on chiles again. When you’re from Texas you just can’t help it. Chiles are everywhere. They are in Mexican food that everyone likes. They are in Chinese, Vietnamese, Thai and Korean food. They are in Middle Eastern food. They’re in almost everything. And like I have previously warned, I am a chilehead. This dish, however, is not hot. IT IS DELICIOUS! Continue reading Seared Tuna with Clementine Orange and Chipotle Miso Sauce
Chorizo, Roasted Chile, Cheese Strata

Dad’s 85th Birthday was this past week and the party was Saturday night. This means I have a captive breakfast group of guinea pigs!!! Because we lost an hour due to the beginning of Daylight Savings Time we knew everyone would be waking later in the morning. No time for breakfast. Brunch instead and we had the perfect solution!
