There are just some days you don’t know what to do for dinner. You have lots of wonderful ingredients but for some reason you just can’t piece it together. Then, Baby Lady calls and says she wants a green couscous as part of dinner. What do you do????? Well, in this case, something completely different. 😮 Glad she liked it but she’s still complaining about the lack of couscous. 🙂 Continue reading Mediterranean Inspired Swordfish on Linguini

Cedar Plank Salmon with Orange & Pomegranate Salsa Accompanied with Grilled Asparagus and Balsamic Vinaigrette

Well, temps in DFW are back in the 80s again. It’s so hard to get in a Fall mood when it’s 88 F outside. Now, granted it’s better than 100 F but let’s be realistic. It is November after all. I have all these soups, stews and braises I want to cook but the weather just isn’t cooperating. So, it’s grilling time. We broke out the cedar planks and did some salmon with a wonderful light salsa and those gorgeous homegrown pomegranates. To accompany the meal we grilled some gorgeous asparagus I found at the market. Pretty good dinner even if I say so myself. 😉 Continue reading Cedar Plank Salmon with Orange & Pomegranate Salsa Accompanied with Grilled Asparagus and Balsamic Vinaigrette

Empty nesters, at last, as we finally got Quickstep into his own apartment. Without the perceived need to fix the children large amounts of protein, Baby Lady and I might start eating more salads. We love nice salads with fresh greens and homemade vinaigrettes, especially when the greens come out of our garden. Butter Poached Lobster Tails
Baby Lady and I love lobster. When we went to Maine recently to visit our youngest son, we ate lobster every day we were there. It was lobsterlicious. Nevertheless, variety is the spice of life. So, when we returned from Maine we didn’t eat lobster for a while opting for a variety of other proteins. Well, that ended last night. Can you say umami? Are you hungry?
