Spicy Ahi & Crab Poke Lettuce Wraps

If you haven’t noticed I haven’t posted anything in a while. It’s because I am always jealous of Cat over at Things My Belly Likes. Not only does Cat have fabulous recipes, photos and a great writing style but she lives on an island in the Caribbean with those gorgeous turquoise waters, beautiful views, unbelievable sunsets, fresh seafood, wonderful rum, the list goes on and on and on. So, time for a vacation in St. Croix for a week to renew our wedding vows and eat, drink and be merry. No posting. No internet. No cell phone. Lots of fun in the sun and snorkeling. Rum, Rum and more Rum. Good food cooked by someone else. Nice people.

Despite all the obstacles American Airlines put in our path, we had a great time and I got to remarry the love of my life, once again. I would marry her every day for the rest of my life. Unfortunately, however, all things must come to an end so we are now back in concrete city with temps in the upper 90s waiting to hit 100 F again, and again, and again. But it’s home, we like it and we have yet to figure out how to move the house, foundation and yard to an island. Continue reading Spicy Ahi & Crab Poke Lettuce Wraps

OK. Who can grill without including pork cheese and chiles? These are sooooo good and easy, too. This was the appetizer for Memorial Day dinner. Continue reading Cheese Stuffed, Bacon Wrapped, Grilled Jalapeños

Being an equal opportunity recipe thief, we had this dish for dinner tonight. This really is a fabulous dish. Although it is relatively straight forward, it is also rather time consuming for 8 spheres. You can do everything but the spheres ahead of time. If you can’t tell from the various posts, Baby Lady and I love eggplant. This is a wonderful preparation. It can be used as an appetizer, served as a side or as a salad. I have a dear friend who hates most veggies and almost every veggie when cooked. She even liked this dish. Continue reading Baba Ghannouj

Zucchini Fritters

I realize that for purposes of aesthetics you should stack items like cookies and fritters. The problem is this is a food blog. I just happen to like my camera and playing with it. Food, on the other hand, I take seriously. No one serves zucchini fritters in a stack and you surely don’t eat them that way. Continue reading Zucchini Fritters

Baby’s Grouper Ceviche

Given the temperate climate we have been having in Texas throughout the winter, we haven’t made a lot of soups, stews or hardy meals. Although the months have flown by, the seasons have more or less remained the same, except we are not being brutalized by searing heat. As such, we are still eating light, crisp meals we would typically eat in the Spring, Fall and Summer. Today was ceviche. Baby makes a pretty mean ceviche. Continue reading Baby’s Grouper Ceviche
