Here is a simple and flavorful salad to help with Thanksgiving turkey leftovers. 🙂
As anyone who reads this blog knows, Baby Lady & I love to cook. Thanksgiving always gives us an excuse to cook way too much food. But what do you do with the leftovers? You can only eat so many repeat dinners and sandwiches. Soups and gumbos are also nice but you grow tired of them after awhile. You can always freeze it for a later date but that takes up valuable freezer space. This was our predicament after we cooked 2 turkeys for Thanksgiving to be eaten by 3 people. 😮 The turkeys and all the fixins were tremendous and we had a great time but what to do, what to do with all that leftover turkey. We had Thanksgiving dinner repeats with some, soup with some, sandwiches with some more and gave Quickstep some vacuum sealed dinner packs but there was still leftover turkey. This salad hit the mark and was quite simple and delightful. The sweet smokiness of the turkey pairs well the the dried, tart cherries and creaminess of the mayonnaise. You get the crunchy freshness of the apples, celery and onions with the nuttiness of the walnuts. All of this is served on a bed of lettuce ringed by beautiful Roma tomatoes. It’s a lovely dish and tasty, too. Give it a try, if you still have any turkey leftovers.
- 1 cup diced Smoked Turkey
- 1/4 cup diced celery
- 1/2 cup diced fresh onions
- 1/2 cup dried tart cherries, chopped
- 1/2 cup apples
- 1/4 cup fresh basil, minced
- 2/3 cup light mayonnaise
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 1 jalapeno, minced
- 1/4 cup walnuts, chopped
- 2 cups leaf lettuce, chiffonade
- 2 Roma tomatoes, sliced
It doesn’t get much simpler than this. After prepping all of the ingredients, place them all into a large bowl.
Add mayonnaise and stir to incorporate. Adjust seasoning, as necessary.
Place lettuce on plate, generously scoop salad into middle of lettuce and ring with Roma tomato slices. Serve & enjoy!
