I realize some of you, upon seeing the title, are saying “Cream of what? Richard what are you trying to do to me?” Calm down… Yes, this is a red chile soup. Yes, it has a little heat. No, I haven’t lost my mind. This is simply an unbelievably flavorful soup and your choice of red chiles helps you control the amount of heat to fit your own taste, as well as the flavor profile of the soup. It is a wonderfully warming soup on a cold and blustery day. You really need to give this a try. Yes, you will like it.

Romesco de Peix – Catalan Fishermen Stew
Inasmuch as it’s still winter, it’s time for another soup/stew. This stew hails from Catalonia, an autonomous community within Spain, with Barcelona as its capital, that borders France and Andorra to the north and the Mediterranean Sea to the east. Due to its location on the Mediterranean Sea, not surprisingly various seafood dishes and vegetables, such as tomatoes, red peppers, aubergines, mushrooms and artichokes, are common. Additionally, because it’s northern boundary has the Pyrenees, you find a lot of pork, lamb and cheese dishes, as well. Tortilla Soup (Sopa Azteca de Tortilla)
It’s still cold in DFW so we’re still doing soups. We also need to lose the weight we gained during the Holidays.
So, we roasted 3 chickens, obtained 5.5 lbs of shredded chicken meat, took the carcasses and made 7 qts of rich chicken stock. When you do that you know there is some soup in there somewhere. With that much chicken meat and stock you can make a wonderful variety of soups, starting with your standard comfort food – Chicken Noodle Soup. Smoked Pork and Sausage Gumbo
Hmmmm…Life sure has been hectic over the last 2 months. We decorated; had the kids home for Christmas; shopped until we dropped; and spread good cheer. We have cooked and cleaned and cleaned and cooked. We had 2 Thanksgiving dinners, Christmas dinner and then my best friend, John, had his 60th Birthday on New Year’s Eve, so we threw him a 60th Birthday party, Tex-Mexican style. Whew!!!
